my version of a lil "M-town"* delicacy:
whole banana chopped up
tbsp peanut butter~chunky preferably.
a little more than enough butter to sautee.
two slices of bread~if you wanna be real southern, use white bread.
melt butter/margarine in frying pan then add bananas. sautee until nice and soft, slather peanut butter on bread, cover with banana mush close sandwiche then panfry sadwiche in pan until brea dis nice and golden.
thankya.....thankya very much.
*"M-town" is my home town better known as Memphis TN.
Did my own version of this today. I call it Peanut Butter and Banana French Toast
Mash up a banana. Make sure there are no big solid pieces or it won't work.
Mixed in about 1/2 teaspoon of cinnamon.
Add about a teaspoon of vanilla extract.
And half a teaspoon of almond extract (optional, it adds a nice sweet flavor though).
Mixed in one regular egg well (you could try to substitute a bit of water, just enough to mix the ingredients).
Mix in about a teaspoon or two of milk/soymilk.
Take two slices of bread (double if making two sandwiches).
Put however much you want of peanut butter on each slice.
Slice half a banana, and put the slices on one piece of bread- peanut butter side.
Put together like a sandwich.
Dip in banana-egg mix, both sides like French toast.
Fry in a greased pan until golden brown on both sides, like French toast.
Cut in half, on the bias.
Top with sugar/syrup of your choice if you want to eat with a fork.
If eating like a sandwich, skip it.
The sandwich is savory, with a slightly salty taste from the peanut butter and the butter I used to grease the pan.
French toast style would be sweet.
Mix can probably make two or three sandwiches.
Voila. Peanut butter banana French toast.
